Follow the directions. There is no room for error
I am an impulsive cook. Therefore, I try to find shortcuts in everything I do. But the one thing that is more important than any thing else while baking is to follow the recipe exactly the first time you make it. Otherwise, how in the heck will you know if it is what you are looking for in regards to flavor, texture, appearance, presentation, etc. After the initial baking you can adjust according to your likes and dislikes. Is it too moist, too dry, too crumby, etc. ?
Another important lesson is to write it down. If you are adjusting a recipe, mark it right on the recipe page. You will probably not remember the changes you made, and if it comes out great, you will want to use it again.

I always try to follow the directions exactly. And have learned to write down changes so I can use them the next time.

ReplyDeleteso true, i really agree with you rose. i absolutely follow baking instructions to the 1/8 tsp of any ingredient... the first time anyway. i write in my recipe books but that i only became brave enough to do recently. (books held that almighty power over my child's mind. i just couldn't mark it up.)
ReplyDeletemy husband and i debate the issue a lot because he is a great cook, and alters everything, without trying it exactly by recipe first. but baking a cake has is equal parts science, art, and heart, or i think so anyway.
