Icing quick tip for square cakes








One would think that icing a square cake would be easier than a round or oval cake, but it is not. If the icing is not applied to the cake correctly it is very difficult to ice the cake with nice clean corners. The first thing that is very helpful, I could not function without these two items, is the wide tip (Wilton #789) and a large icing bag 16" to 20" in size. I recently found these two items at www.shopbakersnook.com.

Fill the bag half full. It is a large bag so if you over fill it, it will be hard to handle. Holding the bag,with your tip barley touching the side of the cake, start to squeeze the icing bag moving away from you, left to right. When you get to the first corner hesitate and squeeze a couple of times,building icing up in the corner, then continue covering the next side, then the next corner as explained, etc. When all four sides and corners are covered, proceed to cover the top of the the cake. You should start in one corner and continue with the icing stripes until you cover the entire cakes. Make sure that each stripe is touching the one before it.

Now you are ready to smooth the icing. Fill a container of hot or cold water for your icing knifes, I prefer hot water when using the large tip method because it helps blend in the area easier. Place your angle blade against the side of the cake. Bring the knife along the side of the cake till you get to the corner. Clean off your angle knife and reheat in the water.This is the trick. Gently bring the blade of the knife to the icing that has been built up on the corner and rock the blade back and forth to distribute the icing around the corner of the cake. Please do not drag the knife. Then with your angle knife smooth the icing on the top of the cake. Moving in straight line from one side to the other and back again. Each time reheating the knife in the water. Once the top is nice and smooth, go around the sides with the hot water knife to smooth out any icing that was disturbed when you did the top.

That is it. You now have a beautifully iced square cake, with nice clean corners.
