Peanut Clusters for home or gifting!
A simple recipe for what will become one of your favorite holiday treats. Make extra and share with your family and friends.
Instructions
Special equipment needed for this one too.
• Double boiler
• Cookie sheets
• Wax paper /or mini candy cups (You can get these in the baking isle at the Supermarket)
* 12 oz. dark chocolate chips or semi-sweet chips
• 12 oz. butterscotch chips
• 2 cups cocktail peanuts
*Put enough water in the bottom of the double boiler to touch the top pan. Replace the top pan. Set it on the burner and turn heat on medium.

*Place both the chocolate and butterscotch chips in the top of the double boiler. Stir often until all the chips are melted.
*Turn off heat or put it on low.
*Add peanuts and stir in until they are all coated with the chocolate.
*Drop by teaspoon on cookie sheets covered with wax paper or drop directly into the mini cups. I think this is easier, looks more professional and is easier to handle whether you are keeping the candy for your family or gifting them.
*Let cool.
*Store in covered container in the refrigerator or small individual Christmas tins.
Personally I don't think I would use the butterscotch chips. I would use milk chocolate and semi-sweet chips mixed.
What could be easier 2 days before Christmas than this one. And after 12 hours on my feet yesterday decorating Christmas cakes, this is a piece of cake.
