Cake Balls!


OK! Now here is the easiest of all the recipes that I have posted to date. Cake Balls! Oh my, what will I think of next. Well I didn't think of it. Many high end bakeries make these because they have a lot of crumbs all the time from all the sculpted cakes that they do and some one had this amazing idea to put those yummy crumbs to good use. I wish it were mine, but it's not, but I am passing it on to you.

This is a great project for the kids to do with you too.

Before you decide to make this, start saving the cut away pieces of cake from your sculpted cakes and the scraps from the cakes that you have to level. Freeze the scraps in a freezer bag with all the air squeezed out. Once you have about 2 cups of crumbs you can make a batch of about 24 of these tasty little treats.

Ingredients


* 2 cups crumbled cake scraps
* 2 Tbsp. confectioner's sugar
* 2 Tbsp. cocoa powder ( if cake scraps are not chocolate based)
* 1/4 cup finely chopped almonds, walnuts,hazelnuts or pecans. Your choice!
* 2 generous shots of amaretto ( or any other liqueur you may like)
* OR if you are making these with the kids, a good non-alcohol substitution is any flavored coffee creamer

Directions:

*Put all ingredients in a mixer and blend on medium speed until the ingredients form a ball.
Note* If the mixture seems too dry, add a bit more of the liquid to make it moist enough to form into balls. They should be moist not wet.

* Use a tablespoon sized cookie scoop to make balls uniform in size.
* Roll the scooped dough in your hands to form a nice smooth ball as if you were making meatballs.
* Place cake balls on a parchment lined cookie sheet for a couple of hours
* Final step is to dip in dark melted chocolate or roll in confectioner's sugar or cocoa.

* If you have dipped them in chocolate, you can drizzle chocolate over them to form a design. One more way to make them special. Use your imagination, I am sure you can think of a few more ways to embelish them.

Alternative for those who are allergic to chocolate. (I could not live that way!)

Use your non chocolate cake crumbs
Instead of cocoa powder, double the amount of 10X sugar
Dip in melted white candy melts, which is not really chocolate after all!

Let dry , place each one in a candy cup or mini cupcake liner and you are done!!!!!
These also make great gifts at holiday time. Easter is coming soon!!!!!

  5. Thank you for sharing this because I've always loathed to cut my cakes to make them flat because I don't like to eat plain cake (without frosting), but I don't want to throw out the excess either!

    Do you by any chance have the recipe for "Black Forest Cake"?It used to be my favourite back in India-haven't come across any bakery selling it here in Oregon :-( The closest that comes to it is the 3-leche cake from the Mexican bakery.
