How to make Leprechaun hat cupcakes



This was the project Tuesday with my kid’s cake decorating class. They had a ball making these and they all came out really good.

What you need:

* I package plain rice cakes
* 1 dz standard size cupcakes, batter tinted Kelly green
* 12 strips of Black fondant 9 inches long and 1 inch wide. Color a ball of fondant approximately the size of a tennis ball. Roll out and cut with a sharp knife or pizza cutter if you do not have the fondant tools. These work just as well. * 12 Shamrocks or make gold buckles out of gold colored fondant.
* Double batch of Kelly green butter cream icing

1. Cut the crown off the cupcakes ( put these aside for cake balls)
2. Ice the rice cakes, top and sides
3. Center the cut cupcake on the iced rice cake with bottom side up. This forms the shape of the hat
4. Ice the cupcake smooth
5. Wrap the black fondant strip(band) around the base of the hat
6. Place the shamrock where the band meets together.

This is a really fun and easy project for children to do with you or for you to do for your child’s class if they need to bring something for the whole class. It is very inexpensive to make.
